Granola bars are one of my and M's favorite snacks. We typically eat them when we're out running errands and don't want anything fast-foody, however, as much as we like them, they can be pretty spendy. $4.00+ a box for just a handful of bars is a bit much in my opinion, so when you combine that with not knowing exactly what is going into them, I'm reluctant to buy them.
I've spent the last, oh, I don't know, year(?) looking for a recipe that doesn't consist of 5,000 steps and 150 ingredients, but I haven't been able to find one. So, I decided to make my own and this is what I have come up with. They may not be the absolute healthiest, but we're not eating them by the twos and I know exactly what is going into them.
Ingredients
1/2 Cup of Honey
2/3 Cup of packed brown sugar
1/2 Cup of Butter
4 Cups of rolled quick oats
2 Cups of Rice Crispy cereal
1 1/2 Tsp of vanilla
1/4 Tsp Cinnamon
Mini chocolate chips
Any other dried fruit or nuts you want to add (optional)
What To Do
1) Melt your butter in a medium pot/pan.
2) Once melted, add your honey, brown sugar, and cinnamon.
3) Let boil for a couple of minutes and. Stir stir stir!
4) Combine your Rice Crispy cereal and quick oats in a large bowl.
5) Pour liquid mixture into your dry mixture and mix well. This would also be a good time to add whatever dried fruits and/or nuts you want.
6) Pour mixture onto a greased baking sheet and pat down firmly with a spoon. Sprinkle mini chocolate chips on top and pat down with spoon as well.
7) Let sit until cool before cutting into bars and wrapping in wax paper, saran wrap, or aluminium foil. Store at room temperature.
